Nyonya Steamed Fish


INGREDIENTS
450g sea bass

A
7 shallots, minced
4 cloves garlic, minced
2 cm young ginger
2 red chillies, minced
1 tbsp sliced wild ginger flower
1 tsp sliced kafirlime leaves

B
3 tbsp Tomato Ketchup
3 tbsp plum sauce
1 tbsp sugar (or to taste)
1 tbsp Chilli Sauce
1 tbsp lime juice
2 tbsp Ikan Bilis Stock Granules
1 tbsp pepper (or to taste)
1 tbsp sesame oil

1 Combine Ingredients A & B.
2 Mix both ingredients well.
3 Then spoon both mixture over the fish and steam over high heat until fish is done. Garnish with coriander to serve.
